A workout for a bummed leg or foot

I rolled my ankle last night during my dance cardio class. It happened in the first 10 minutes of class and somehow I was able to finish teaching. Everyone in the class saw it happen, so they were all supportive. All class I felt like I was doing the sprain dance, like Lisa Turtle. I even saw some students in class hopping on one leg like me.

It is annoying to have an injury but you can still find ways to work out. Like this person:

I sprained my ankle once in college while in dance practice. I was out for about 2 weeks. I swam every day to keep myself in shape. So if you have a bummed leg or foot try this workout. It will focus on your pecs (armpits), abs and your back!

sweetgreen Boston opening

I heard about sweetgreenback in November 2012 from a friend of mine who was obsessed with it when she lived in DC. When she heard it was coming to Boston she made sure to email me and tell me that it will become my favorite salad spot in Boston, and I think she is right!

I might have been the happiest customer in the history of sweetgreen and kept cheering after everything. What? I love salad!

I opted for the guacamole salad after three different people told me that it was the best. After my salad went through the assembly line they asked if I wanted any more toppings. EEEK. I said yes! How could I say NO?  So, I added raw beets, sweet potatoes, broccoli, and spicy quinoa. I guess with that many "add on's" I did NOT get the "guacamole salad".

Let me tell you I was SO full from that salad. It was delicious, and they really give you a good amount of each topping. I was most pleasantly surprised by the dressing. I asked for it on the side (as I always do) but after trying it I realized I would have been just fine with it mixed in the salad already. It felt light and fresh and after talking to some of the sweetgreen employees I found out that all of their dressings are homemade! SCORE.

Dessert: froyo. I had to stand up and stretch a little before dessert time. But after a few belly taps I was ready to go!

 I love crunchy things in my ice cream and froyo. Whenever there are graham crackers or waffle cone pieces I always get that! So yes, that is what I got this time too. I had them throw in 2 little candied pecans because someone said they were "amazing". Normally I would not have asked for the pecans. But yes, they were quite awesome.

I love this place and will go back for sure. If you are in Boston GO CHECK IT OUT!

Fruits and Vegetables that take a while to go bad.

BUUUUT I hate waste, especially when it comes to food! It is hard, though, when you get excited and buy a lot of vegetables and fruit and then you realize there is not enough time to eat everything before it goes bad. I have a habit of buying too much, and sadly seeing things go bad and throwing them away.

Below are a list of fruits and vegetables that stay fresh for a long time (if stored correctly)!

Apples

Every day I have an apple, but sometimes I over buy and my apples do not seem as fresh as I would want them to be. In order to avoid your apples going bad store them at a temperate of 30°F - 32°F. If they are stored in a place that is just 10 degrees warmer, they’ll ripen twice as fast! Make apples last by putting them in a plastic bag in your fruit crisper drawer. Eat the largest apples first; they’re usually the first to go bad.

Beets

I love fresh beets! I make them often, and they are always delicious. Beets can last between 2 and 4 months in the refrigerator. First, cut off the greens if they’re still attached, and then store them in a plastic bag in your vegetable crisper. Stick a few holes in the plastic bag. I am making a fresh beet salad now, stay tuned for this blog post!

Carrots

Did you ever notice how carrots always seem wet? Carrots give off a lot of moisture and this is part of what cases them to rot more quickly. A tip would be to wrap carrots in a paper towel, so that it absorbs the moisture. And if you buy them in a plastic bag, stick some paper towels in the plastic bag and change the towels whenever they get too damp. This can keep them fresh for a few weeks to a few months.

Potatoes

Potatoes do not like light (makes them turn green) and the ideal storage temperate is 40ºF. If you have a basements put your potatoes there. This is a really good storage spot for potatoes. In good conditions they can last from 2-4 months. Sweet potatoes are a little different and do not last as long in storage so eat them within a week of purchase! 

Garlic

I used to keep my garlic cloves outside on a little plate. But I soon noticed that they did not stay too well. Teh garlic would start to sprout if I did  not use it within a week.

Garlic keeps longest when stored at 60º- 65ºF and moderate humidity. Garlic should be ok if you place it in a dark kitchen cabinet. You can also store whole bulbs in the fridge in a paper bag. The bulbs will last for months if you store it this way... score! But make sure your garlic is not cut or else everything will smell of garlic.

Take note that once garlic has been in the cold, keep it there! it will start sprouting within days after being brought to room temperature. So if you decide to store it in the fridge keep it there until right before you want to use it!  

Winter Squash

Pumpkins, butternut squash, and other varieties of squash will last between 2 and 6 months if kept in a dark cabinet. You want air to be able to circulate around the squash so make sure to keep them in a single layer with not much around them. 

Frozen Veggies

If your veggies always seem to go bad, you can try frozen! Frozen vegetables are frozen within hours of being picked, and can be even healthier than the fresh vegetables. You don't have to worry about them going bad, and storage is easy.. in your FREEZER!

Healthy catering for a small party

After an early morning start for hair and makeup I knew my bridal party and I would be so hungry. I contacted my friend Elise, who is the person behind Lillybelle Foods, and asked her if she could make a healthy lunch for us. 

She was SO on top of it, creating an amazing  colorful and healthy menu and taking into consideration things like allergies and food restrictions.

She told me the menu beforehand, and I was excited, but I was even more excited when I saw it come to life and tasted it. OMG it was seriously amazing. It was perfect for us to grab and eat, all the bridesmaids loved it!!! Total success. THANK YOU ELISE!

If you are a Boston local and are interested in a small group catering contact Elise. She delivered the food to us, set it up, and really took the worry out of "how am I going to feed my bridesmaids?!!!" It was easy, she is reliable, and this was seriously a highlight of my day.. sounds silly, but its true!

Married! A little preview of my wedding weekend.

This weekend was the best weekend of my life... so far. I will wait after the honeymoon for a detailed post, but I wanted to capture a few highlights of the day/night. (pictures are in random order) Right before our big reception entrance, my friend snapped this picture.

TIEKS!! I had to spread the love that I have for Tieks with my (7!) bridesmaids and my mom(s).  Everyone was so excited to get their gifts. I wore my Tieks for all the dancing!
