crispy pepper fries (a healthy take on french fries)

I was searching through my OLD YouTube videos and found this goody! HAH it is a GREAT recipe and I think I am inspired to do try this again tonight. Check it out!

NOTE: In this recipe I say to get 4 peppers in total.  You can use just one or two peppers if you just want to make enough for 1-2 people. I made it recently with one pepper. I cut the recipe in half and it worked out great!  

 Not your typical french fry, but still has a nice crunch and warm feel! Much healthier and a great alternative to french fries. (Even though I do love french fries!!!!!)

Ingredients:

2 green peppers

2 red peppers

try some hot hot peppers too! (if you like spicy)

1 cup whole wheat flour

1 cup bread crumbs (could be more or less)

1/2 cup parmesan cheese (could be more or less depends on how much you use)

3 eggs

Directions:

preheat oven to 400 degrees

YOU WILL HAVE THREE DIFFERENT BOWLS

bowl 1: whole wheat flour (about a cup)

bowl 2: 2tbs of whole wheat flour mixed with 3 eggs (you can add cayenne pepper, hot sauce or mustard to this bowl if you want a little kick)

bowl 3: bread crumbs add parmesan cheese or any other seasonings! (parm is obviously optional but delicious!)

cut all your peppers the size of a french fry long and skinny! (watch video if you need help)

dip the peppers into bowl 1 then bowl 2 then bowl 3! EASY! place on a nonstick pan. When all the peppers are coated place in over for 20 minutes or until golden brown. These taste best when they are HOT! But be careful not to burn yourself!
