raw pumpkin spice brownie

Jody came over last week and she shared this amazing brownie recipe with me. It is easy to make and doesn't require using the oven.  This is the kind of dessert that you can eat any time of day and not feel bad about it :) Thank you so much Jody!!!

 

Brownie base:

Process-

1 cup cashews

2 cups dates

1/2 - 1 cup cacao powder

1 tbsp coco oil

tsp vanilla 

dash of sea salt

Blend ingredients together until they "stick" together and all the cashews are blended. Spread out the brownie base in a glass square container  and push until it is pressed into the dish and looks like a brownie! Put brownie base in fridge while you make your topping.

 Topping:

Process-

1 cup cashews

1/2 cup butternut squash or pumpkin (chopped and pealed)

1/2 cup dates

1/2 cup water

1 tsp coconut oil

1 inch piece of ginger (grated)

tsp of cinnamon

tsp of nutmeg

dash of sea salt

After brownie base is in the fridge for about 15 minutes put on pumpkin topping and then cut into brownie squares or just scoop brownies from glass container and eat with spoon! Store this brownie dish in the fridge.
